The lovely folks at High Ridge Farm in Montville make their cider entirely from foraged apples, picking from lonely trees in every abandoned farmstead and back yard they can find. This medley of fruit is then pressed by hand, wild fermented, aged in barrels for a year and bottled unfiltered. A true labor of love.
"Head in the Sky" is their sparkling cider- with secondary fermentation occurring in the bottle in the champenoise method. Beautiful, dry, sophisticated cider made by hand- a true treat!
